Buddha Bowl On A Budget

It has come to that time in the semester when there is more evidence of fast food than produce in my house. As I handed in my second to last assignment yesterday, I felt grateful that my only remaining assignment required a nice meal. I made this salmon buddha bowl in less than an hour and prepped an extra portion for work. Meals like this are great for weeknights because they can be made with ingredients commonly found in the house or to clean out the fridge before a grocery shop.

This recipe made 2 portions, so I recommend doubling if you plan to use it for meal prepping!

The ingredients for a quick lunch bowl like this are as flexible as they come. For this meal, I used 2 small salmon fillets I found on sale and a mix of vegetables I needed to finish off soon:

  • Green Onion (2)
  • Red Bell Pepper (1/2)
  • Broccoli (1/4)
  • Avocado (1/2)

Preheat the oven to 400*F and line a small pan with tin foil. Place two thawed salmon fillets on the pan and drizzle with olive oil. At this point, you can season the salmon with whatever spices you prefer. I just used salt, pepper, chilli flakes, and brown sugar. peel three garlic cloves and place them in the pan, whole, with the salmon. Tent with tinfoil and cook until salmon reaches desired crispiness.

For the rice base, I cooked 1 1/4 cups of basmati rice in 2 1/2 cups of salted water, then portioned between the servings before lightly drizzling it with soy sauce.

As the salmon finished cooking, I chopped up my vegetables and added them to the rice. I used a sesame salad dressing on everything.

Slice each fillet in half and add it to each serving. Allow any stored portions to cool fully before packaging. This meal can be stored in the fridge for 3 days maximum.

Ingredients:

  • Two large eggs
  • One medium tomato, diced
  • One tablespoon of olive oil or butter
  • Salt

Instructions:

  1. Crack the eggs into a bowl and beat them until the yolks and whites are thoroughly combined.
  2. Heat the pan over medium-high heat and add the olive oil or butter to the pan.
  3. Once the oil or butter is hot, add eggs to the pan and sauté for about 2-3 minutes until they soften.
  4. Reduce the heat to medium-low and put tomatoes into the pan.
  5. Stir the eggs and tomatoes together.
  6. Add salt to taste, and give the eggs one final stir.
  7. Done

Optional: You can add additional seasonings or ingredients, such as onions, garlic, cheese, or herbs like basil or parsley. Add them to the pan with the tomatoes before adding the beaten eggs.
